Squash!

Could you have guessed that I had butternut squash for dinner? I also like making the No Fat Not-Yo Cheeze sauce recipe using Acorn Squash. I never remember eating squash before I changed my eating habits. I didn’t even know how to cook squash. Over these last two years I have learned a lot of things.

This recipe is nut, oil, sugar and dairy free.

Dinner was Mexican Mac N Cheeze with Salad and Bread. The No Fat Not-Yo Cheeze sauce was put together last night. I cooked the squash on Sunday when something else was in the oven, saving time and energy. I was not sure what I was going to make with it at the time. When I got home tonight I decided to put this together. It was fast and easy. All I had to do was cook the pasta and mix the sauce. I added chopped spinach to the sauce and cooked it for a couple of minutes. Topped with King Sauce. Bread was in the freezer. Warmed it up in the toaster oven. Dinner is served.
