I had no idea what I would be having for dinner when I got home this evening. I still had some holiday leftovers. Love leftovers makes for an easy night of cooking. I remembered someone on Protective Diet Living talking about making shepherd’s pie. I decided to make my own version with the leftovers I had. You may think it’s doesn’t sound good but it actually ways. It was better than having just leftovers again.
This is what I had in my shepherd’s pie. Stuffing, Holiday Loaf, Mushroom Gravy, Asian Kale with extras (last night’s leftovers), Mashed potatoes on top added a little Franks Original hot sauce.
Baked it in the toaster oven at 350 degree for 20 minutes, covered it with foil. Dinner done in 20 minutes as I took care of other things that needed to get done. Wanted to have some bread with dinner, so I took some out of the freezer. I laid it on top of the toaster oven (with a folded cooking rack in between) while my dinner was cooking. After dinner was done put the bread in the taster for a couple of minutes.
I did this all while I finished listening to the Rich Roll pod cast with Dean Karnazes. I want to quote a couple of things Dean said “Change what you put in your Mouth!” and “Changing little things can lead to a big change!” These two quotes are so true!!
Dinner done… very little effort!
