Today, I tried the Chorizo Tacos. Oh my goodness, they were good! I am so glad I was working from home because I enjoyed these for lunch and dinner.
I also made what I’m going to call “Carnitas” Tacos. I took the seasoning from the Chorizo tacos but added shredded Jackfruit. Cooked it for 20 minutes same temperature. Next time, I need to check them at 15 min, 20 min may have been a little long. I thought I was back in California eating at the tacos trucks.
Then I took the same seasoning added ¼ cup of tomato paste and 1 cup water. Made a hot salsa for my tacos. I think that this seasoning will also be good in rice. Oh the possibilities.
Topped them with Cilantro and Taco Slaw
Breakfast: Peach, Breakfast Brounies
Lunch: Chorizo Tacos / “Carnita” Tacos
Snack: Blueberry Muffin
Dinner: Chorizo Tacos / “Carnita” Tacos
