It’s been three years since I started eating a Whole Food Plant Based Diet. The last two years I have tried various new things. Today, I tried an Artichoke. I don’t think I would have tried it, if it wasn’t for the videos that helped to explain what to do in detail. Check out the video below. It was an experience eating an Artichoke. I cooked two of them. I have one more left to try. I have to say that the breading was wonderful.
Today’s Meal:
Breakfast: Zucchini Bread (in chunks) topped with crushed pineapple and banana slices
Lunch: 50/50 Salad (Brown Rice, Dill Pickles, Pickled Pepper, Fire Stick Carrots, Tomatoes, Spicy Bird Seed, Firm Cheese, with mixed green with French Onion Dip
Dinner: Breaded Artichokes, Japanese sweet potato and salad with French Onion Dip
