What’s your favorite jackfruit meal?

The Jackfruit tree can produce about 100 to 200 fruits in a year. The Jackfruit is the largest tree-borne fruit in the world. Its weight can range from 10 lbs to over 100 lbs. (http://en.wikipedia.org/wiki/Jackfruit)
I have only had green jackfruit. Maybe one of these days I will get to try a ripped jackfruit.
The green jackfruit I buy comes in a can. The ingredients are jackfruit, water or jackfruit, brine (water & salt). It’s not sweet and has a meaty like texture. I have tasted it straight from the can and it does not have a flavor at all. It takes on the flavor of whatever you are cooking. I buy the green jackfruit from an Asian Market.
I made Cheese Enchiladas this weekend using the Buffalo Notzzarella Cheeze Recipe and the Red Enchilada Recipe. My husband and I decided we should try using jackfruit. We have enjoyed jackfruit in the Jacked-up-pulled-pork and the Crabby Cake recipes. Why not try it in enchiladas.
I made the red enchilada sauce. I did not toast the chili pods. Shredded the jackfruit removing the hard core pieces and discarding them. In a sauce pan add the enchilada sauce and shredded jackfruit. Let it simmer for 15 to 20 minutes. Let it cool and put it in the refrigerator overnight.
For dinner I had jackfruit enchilada, spanish rice with salsa and king sauce. Salad with French onion dip for a dressing with garlicy dill pickles and pickled pepper rings.
