Working full-time and a commute which takes two hours a day leaves very little time for cooking.
And makes “picking up” local fast food “on the way” easier.
And very tempting.
And definitely, bad for my health.
Meal planning isn’t only essential, but lifesaving.
Then it happened!
On the drive home, with all this time to think, I started to visualize each item in the fridge and pantry.
Different combinations of items and ingredients danced like sugarplums in my head.
I pulled into the driveway with dinner planned.
But this wasn’t always the case.
Cooking isn’t a skill I developed. Which put a huge weight on my shoulders.
Over time, I learned different tips and tricks which made plant-based living easier.

QUICK & EASY SLOW COOKER BAKED POTATOES
Only one ingredient needed.
- No Aluminum foil or water needed.
- No smothering with oil or butter needed.
- And definitely, no poking holes needed.

So, grab the sack of potatoes from the corner, a vegetable brush (not required but nice) and head over to the sink.
- 5 - 6 Potatoes: Add more or fewer potatoes depending on the size of the crock-pot.
- Wash and scrub the potatoes, remove any dirt.
- Cut out any bad spots. Leave as much of the skin on as possible.
- Stack the potatoes on top of each other inside the crock pot. Cut in half, if needed.
- Cook until tender. (check using a fork or knife)
- Top with favorite toppings. See Below for Ideas
- Set temperature to High: 3-4 hours or
- Set temperature to low Low: 8 - 9 hours depending on desired cooking time.
- Temperature for potatoes, cut in half High 2 ½ - 3 hours

- Canned Beans (any kind), drained and rinsed or cooked from dried
- Slice or diced
- Tomatoes
- Onions
- Chives
- Olives
- Corn
- Mushrooms
- Broccoli
- Any favorite vegetable
- Seasonings:
- Cilantro
- Basil
- Dill
- Parsley
- Pepper
- Garlic Powder
- Seasoning Combination:
- Sprinkle together:
- Garlic Powder
- Dill
- Dash of Pepper
- Salt if desired (but not needed)

Potatoes are an excellent source of vitamins, nutrients, and fiber. The majority of the fiber is in the skin. So, leave as much skin as possible on the potatoes.
Baked potatoes have a moist, light and fluffy delicious flavor and texture. Top with some simple veggies or one of the other ideas above.
Simple and easy plant-based meals are possible.
One day soon, sugarplums will be dancing in your head too.

wow, i had no idea you could cook potatoes like this. I’d been considering getting an instant pot for things like this, but now I think I need to revisit my slow cooker!
If you are looking into either an instant pot or slow cooker, I would recommend the instant pot. The instant-pot has a slow cooker setting. The instant pot has been life changing for me in the kitchen. This recipe is a great option for those that only have a slow cooker.
With the instant pot:
When I’m cooking whole potatoes: I use the rack that comes with. 1 cup water on the bottom, 10 min on high, Natural Pressure Release (NPR). NPR mean you let the pressure come down naturally.
When I’m cooking cubed potatoes: I use a steamer Basket. 1 cup water on the bottom, 1 min on low, Natural Pressure Release (NPR).

Can I put the potatoes whole will it still work ?

Yes you can add whole potatoes it will just take longer to cook. But it does work.
