Many times breakfast consist of my overnight oats. Today, I added blueberries. If I’m hungry later I will have some Zucchini Bread. Usually this holds me over until lunch.
Overnight Regular Oats
1 cup regular old fashion oats
1 cup unsweetened soy milk (Just enough to cover the oats)
1 banana sliced
Cinnamon
Other fruit (optional)
Mix everything together in a bowl with a lid, cover and put it in the fridge before you go to bed. Breakfast is done when you get up in the morning. I eat it cold. You could also warm it up if you like.
Many times I smash my banana then mix all the other ingredient. I have added apples or blueberry. Add your favorite fruit or just what you have available.
I look for unsweetened soy milk without additive. I use Trader Joe’s unsweetened soy milk (Now called Soy Beverage. 🙁 It’s still milk to me.) I have found that they have the best price. You could also make your own rice milk or oat milk. That way you know what’s in it and it saves you money.
